A very pleasant tasting pea soup with a nice aroma. While most pea soup recipes include ham or bacon, this recipe is excellent with just peas, onions and a few carrots if you have them. This recipe makes about 8 servings, more or less. If you are cooking for one person and do not have refrigeration, you may want to cook half of this amount. One way to preserve pea soup without refrigeration is to heat it up to a simmering boil two or three times a day. Unless you repeatedly boil the soup, it will spoil quickly at room temperature.

  • 1lb split peas (2-1/2 cups)
  • rinse well
  • 5 cups water
  • 1 onion
  • 2 cloves garlic
  • 2 tsp salt
  • 2 Tbs oil
  • 5 whole cloves (seasoning)
  • simmer 1-1/2 hours
Add:
  • 1 leek
  • handfull carrot dices
  • handfull chopped celery
  • 1 tsp dry parsley
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp marjoram
  • 1 tsp garlic powder
  • simmer 30 minutes

Serve with crackers and whole wheat bread.

Tastes great with water.
