Cool the Carboy

If your fermenting area has a temperature above 65F, you should consider setting the carboy in a water bath, with a wet towel over it to keep the temperature down. You can also put a bottle of frozen water in the bath to lower the temp. With Wyeast 1007 German Alt, I like to try to keep the fermentation between 60F and 65F, the closer to 60F, the better.

Clean Up

Wash everything, store it and relax.
